As we’re coming to a close on our sentance time in Alabama we’re trying to soak up our favorite things while we’re here. One of those things being Sonic. We don’t have them in the Northeast so we’ve been trying to enjoy the food and their 168,000 beverage combinations while we still can. One of our favorite things are their breakfast items. Good God. The eggs and cheese, the bacon…oh lord the bacon. However, trust me - do not, I repeat DO NOT go look at the nutritional information for their food if you don’t want to give yourself a heart attack on the spot. So not only did I try to think of a way that I could make it a little less unhealthy I had to think of a way to mimic it for when we get home and are without. I gave it a shot and not only did he love it, he said that its infinitely better than Sonics. Go figure. In all reality it doesn’t take very much time and its easily doubled, tripled or quintupled should you be serving a crowd. Give it a shot, you’ll thank me!
First, in order to make sure that everything is hot when you put it all together you need to multitask here. Pop two pans on the stove to warm up. Next come the potatoes. I found these pre-seasoned potatoes but you could easily find any pre-shredded potatoes and season them yourself. These were just easy. Toss them in the pan to brown up.

Next we’ve got to get the bacon going. I swapped turkey bacon for regular bacon. Actually if we’re being honestly honest, I actually prefer it. Its gets very very crispy without being greasy or stringy. If you prefer you could add crumbled sausage of course. You could also leave out the meat entirely. Its up to you of course. Its your burrito and in your house pretend you’re the BK King and have it your way.

Next up is the eggs. For two burritos I like to crack 3 eggs because, your girl, she’s not stingy. To them I add salt, pepper, parsley, a dash of hot sauce and a bit of milk.

Wait, before you beat them up give your potatoes a stir and flip that bacon. Crispy bacon = good. Burned bacon = worst thing ever.

Now we beat them eggs. Make sure you beat them good and hard. If it helps you can pretend you’re a Las Vegas Mob Boss in the 50s. Listen eggs, nobody counts cards in my town. Nobody.

By now the bacon should be done Pull it out of the pan and set it on some paper towels to de-grease a little. Now because I’ll always be a fat kid at heart, I add the eggs to the pan the bacon cooked in. Dude, its turkey bacon. Its not like there was a half cup of bacon fat.

Go ahead and do what one does when making scrambled eggs. Alton Brown told me that if I make figure 8’s in the eggs while they cook I’ll have perfect eggs. Since he is brilliant and makes fantastic food I do what he says. Does it actually work? I dunno. My eggs are delicious.

When your eggs finish up, remove them from the heat and get your tortillas ready. I like to use these wheat wraps because they taste really good. I use 8 inch tortillas because I like it when the ends are open. If you like to fold them under so that everything stays in, by all means use those enormous ones. If you like flour, by all means use that too. First up, potatoes. Keep in mind that you’ve got to roll them so don’t overload them like I did the first three times. Line them up down the center of the tortilla.

Next, the eggs. Line them up on top of the potatoes.

Next up is the cheese! Use what kind you like. Cheddar, Gruyere, Swiss, Monterey Jack. Its up to you! We had tacos earlier in the week so I use a leftover Mexican blend.

Now add the bacon or sausage. Yum, almost there!

For mine I leave these off but Ged loves them. He thinks the jalapenos are the most essential thing to the wraps. I disagree but that’s the best part about making them at home right?

Roll those babies up nice and tight. I like to slice them in half because its just easier to eat that way. Then serve those babies up! Look at that. The insides make me melt.

I nearly had to lock him out so that I could take the picture before he snatched them right off the plate. How can I blame him though, they’re absolutely delicious!

Jalapenos. Yum! I’m with Ged all the way on this one. And I’ll have to try the turkey bacon, because my only experience was at someone else’s house and it literally and seriously was like that fake food kids have for play kitchens. Had to put my foot on it and hold it down to gnaw off a corner.

Steph - Dude they’re so good.
Robbi - Yeah you need to find a brand you like and not under cook it. I always find that its best when its very crispy and it practically snaps off. Yum.
