100 New Recipes

From my 101 Things to do in 1001 Days list is # 48 Cook 100 New Recipes.  This is where I’ll catalog what I’ve made and how I liked it. 

1 - Spicy Beef Nachos - 9/17/07

This one is definitely a keeper.  I really liked the blend of spices and tenderness of the meat.  I also liked the flavor a really yellow corn chip gives it.  Delicious.

2 - Alyson’s Vegetarian Chili - 10/13/07

This one was good.  Very hearty but also very healthy.  It made a metric ton so I’ve got plenty of leftovers stowed away safely in the fridge for a dreary day that I don’t feel like cooking. 

3 - Ina’s Salmon and Lentils - 10/24/07

This one I was surprisingly non-plussed about.  It was a whole lotta “meh”.  It was relatively bland and not enough flavor on the fish for me.  The lentils were okay, I’d never tried them before and I wasn’t thrilled with them.  Eh. They can’t all be winners no? 

4 - Easy Chicken Tetrazzini - 11/3/07

This was absoluely delicious.  The flavor was incredible, it was very filling, yet light.  I can’t say enough about how amazing this tasted. Plus it made a lot so we had enough for dinner and enough for lunches the next day.

5 - Mock Super Sonic Breakfast Burrito - 12/14/07

In an effort to try to copycat a Sonic Burrito I tried throwing similar ingredients together and it turns out that we actually prefer these now to the ones from Sonic!  Who woulda thunk it?

6 - Ina’s Roasted Fennel - 12/25/07

I was quite literally shocked and taken aback at how amazing this was.  I couldn’t believe it.  I like fennel cold in salads but when it was roasted it took on a whole different flavor.  More rich and earthy while still being fennel like.

7 - Ina’s Roasted Tomatoes - 12/25/07

I’ve made roasted tomatoes for this sauce but never have I made them to simply eat as a side dish.  They were amazing.  Sweet and juicy.  As Ina would say they were Faaaaabulous!

8 - Portabello / Chicken Margherita - 1/1/08

This was absolutely fantastic.  Light and hearty.  Plus the tomato gave it a nice fresh kick that was unexpected.  We loved it so much he asked that I include it in the regular rotation.  I don’t mind.  It was easy-peasy and took maybe 5-10 minutes to prepare.

9 - Chicken Tika - 1/3/08

I was shocked at how good this was.  I literally couldn’t believe it and it was very easy to make.  No special equipment or strange spices here. 

10 - Individual Meatloaves - 2/16/08

Being that this was an Ina recipe I was expecting greatness and it totally delivered.  They were fantastic and, when cooking for two, the freezeability of the other servings was fabulous.  Now I’ve got a few mini meatloaves in the freezer ready to go for a night when I don’t feel like cooking.

11 - Herbed Popovers - 2/16/08

These were insanely good.  Plus they were much easier than I even dreamed they could be.  I did chuck in some herbs I had in the fridge though.  The fiance loved them and we gobbled up a whole batch of twelve over two nights.  Delish.

 12 - Rachael’s Grilled Chicken with Apple Gravy and Homemade Rice Pilaf - 2/20/08

 Now I’m not a huge fan of RayRay as I like to call her.  She’s way too perky for life.  But I adore her magazine and its got tons of great recipes within.  I tried this one and its a total keeper.  It was fantastic. The Apple Gravy started with Cider and you can’t really go wrong there.  It was great.

13 - A Spaghetti Sauce of my own creation - 2/23/08

I was in the mood for a meat sauce.  I have a hard time with a lot of recipes I find regarding meat sauce.  I’ve tried several and few really work out the way I want them to.  So I took some of the basics, added a few of my own touches and voila.  Fantastico.  It turned out amazing.  I need to post it soon.  Just as soon as the lefovers in the freezer run out. :)

14 - Tex Mex Chili - 3/08

This is fantastic. Its rich, spicy and salty - just the way a good chili should be. Not to mention the fact that you get a steamy pot of chili in roughly 30 minutes.

15 - Pasta e Fagioli - 4/08

Tried this once and that was all it took. Practically make this once a week now its so good. Not to mention that its insanely easy and made up of 95% pantry items. How can you beat that!

16 - Sky Blue Potatoes - 6/08

I made these for a dinner party but rather than using blue cheese I swapped in a good sharp cheddar. They were bite sized and to die for. I’ll definitely be making - and posting - these again.

17 - “The Chewy” Chocolate Chip Cookie - 6/08

This one is getting posted VERY soon. I’ve been on the hunt for the perfect chocolate chip cookie. After testing 10 or so duds I found it. This is the perfect cookie.
